The dunes, the visitor center, and one of the short hikes into the alpine and more forested areas. Depending on the time of year. If you go in the winter months, also check out the Ojo Caliente hot springs outside the park. Thumbs up!
You can do it in a single day. If you plan to go up the dunes, be sure to do it early in the morning. Once 11am hits, the sand starts to get hot! And it isn't fun trying to hike to the top in the heat. Also bring plenty of water no matter what you decide to do, as well as bug repellent if it's mosquito season.

Its a hike forsure but anyone used to the elevation and in shape can do it reasonably within a day
I would definitely hike the dunes first depending on your energy and stamina. 😉. I'm heavy into photography so getting to the top with my equipment was my personal goal and it was worth it. Fantastic views. As mentioned, the stream is another attention worth taking time with. We waded but that would depend on the time of year and rainfall i suppose.
