Alexander springs is considered one of the more family friendly areas. Wide open and gently sloping towards the spring in the far back corner. Most adults stand about waist deep, get there early on weekends as it's not a very big parking lot and regularly fills to capacity
Ponce Inlet is good. You can go to the lighthouse oh, it's very historical. Or walk out to the beach. Or walk out in the jetty and look at the river. Maybe see some dolphins.
You can go to any of the springs and they have swimming. Also some of the lakes have swimming spots also. Carney Island is a great park to take your kids to.
Where were you planning on swimming? There are plenty of springs and lakes that are good for kids.
I cant give any specifics but most lakes have plenty of shallow areas
