Is the park or more specifically salt springs have a closing time? As for being able to swim and tube if you're not renting.

You can most definitely swim at Salt Springs they do close the swimming area in the evening but I'm not sure what time .

There are many swimming abd camping springs in the Ocala natio am Forest. Juniper Springs, Glen Springs, Alexander Springs to name a few. Just Google what you are looking for and the answers are right there.
