Caves and hikes.
The east side is Bear Gulch cave and the pinnacle spires. The cave is awesome, you literally go inside and climb up 100 or so feet with use of man made stairs. Drive to the trailhead and it's only a few miles roundtrip. Haven't been to the west side yet.
Condors
Trails, beautiful terrain, caves, rock climbing, and condors.
Even past the caves on the east side you get rewarded with a nice view from the reservoir. Get to the highest peak "chalome peak" once you reach the fire look out you're able to see the the towns, Soledad, Greenfield and king city. The view at moonlight is amazing
Less people visiting west side. Many trails and cave. Especially cave was very good.

So many trails... You have to do what you're interested in. You won't be disappointed. Check with the rangers at the visitor center. They'll make good recommendations based on your abilities and how much time you have. The campground there is excellent.
The cave, reservoir, and good views are the best part. There's also a couple other things you can find along the way.
