If I put a deposit down on rifle can I get a different rifle when I pick it up because I've changed my mind on which one I'd like to get.

Yes, absolutely. You are not locked in to buying a particular firearm or even one. When you go back within 30 days of your background check application, you can change your mind to get a different firearm or get more than one as long as your application and choice is for a particular type. For example, if you apply to purchase a long gun (ie rifle) you can't change that to a pistol. It has to be a long gun (ie rifle, shotgun). If you want to change to a different type, then you have to start your application and 7 day waiting period again.

If the one you want is not in stock, you may need to wait if they order it for you. Also, not sure if the clock starts over again on thed 7 day waiting period.

Yes. They have a 30 day lay away. But once you leave with your purchase, it's yours and if you want to return it, it will be considered used even if you haven't put a round through it.

I believe they will let you. I don't know about the return of a deposit but if buying a diff one I don't think they'd care
