Whatever, the bread is delicious; it seems European. Awesome desserts, too.

The make their own pasta and bread daily. The flour source I do not know.

Leslie, I am sorry that this reply is so late. I didn't realize guests could ask us questions. Our bread is made from a sour dough starter from Europe that is over 100 years old. In addition we do use local New Mexican flower. We make some of our pastas as well, but most at the current moment are imported from Italy.
