Do they use 00 flour for their crusts?

Yes we use 00 Caputo flour imported from Italy!

They use flour for all their crusts but do have a gluten free flour option

I did not see a grain-free option on their menu, if that is what you mean by 00 flour. Even the gluten-free had rice flour.

I know they have gluten free
