You should try and make a reservation. Otherwise you will be jocking for seats at the bar or hoping someone with a reservation doesnt show up.

I definitely would. Using a concierge service definitely helps. Got me a next day reservation when it was booked two weeks.

It's best to make one. The calendar opens a month in advance so if you want a Saturday evening reservation in September, you'd make the reservation as soon as possible after midnight 4 weeks before. The restaurant opens @ 5 pm and a line forms in advance for the few empty seats at the bar.
