Yes, they stayed there. There are lots of photos of James Dean, Rock Hudson, abd Elizabeth Taylor throughout the public spaces. Plus a room of memorabilia. The film was done near Marfa, not on the King ranch. The Ryan Ranch, west of marfa.

Yes, they stayed at the hotel (though perhaps not for the entire filming time, from other things I've read), but it was not filmed there. There are many large photos of the cast lounging around the ranch on the walls of the hotel.
