Thew Dupont forest near Brevard is very ADA friendly. There is ample space to park and the trails are very easy to maneuver through. You should try the Blue Ridge Parkway this time of year for the trees changing.
Looking Glass Waterfalls is easily accessible from Pisgah Forest .You can park at the side of the road and can see the waterfall from there or if you want closer view, it's few steps down the stairs. Dupont Forest is also nearby - Triple Falls trail has an uphill hike but beautiful falls and fall foliage. It was also a movie location of The Hunger Games.
