Try the Killer Potato at The Warden's Table. Brushy isn't far from Oak Ridge - seemed to be plenty of lodging and dining options there.

Bbq by far. Shopping and Dollywood in Gatlinburg should wear you out and force you into an early evening. You won't have any problem getting a good nights sleep after that.
