We arrive at 11 and we were checked in no problem. On the day we left, we had a shuttle reserved at 7am and they were checking people in at that time. I think it's really about room availability. During summer season, I would imagine they will be more firm on the check in time. But they will still hold your luggage, if you arrive early.

Yep, I used Uber all the time whilst there.

It is NOT walkable, I highly discourage it as you would be crossing over I4 on Universal Blvd. It would be a very inexpensive Uber or Lyft due to it being less than a mile to I Drive. There are not many attractions at that section so you might choose a destination prior to going. I would estimate around $10 to the Magical Midway and about $15 the Icon 360 (Orlando Eye).
