In a way you can by adding and removing things. But each bowel of ramen comes with it's own set of toppings. It's not like Ramen Republic, but it taste way better.

Yep! The additional toppings' prices vary, but you can do pretty much anything you want with it! The options I can remember off of the top of my head are corn, scallions, mushrooms, amd extra pork belly. There are plenty of other options though.
Yes you can ask them to do anything. We are (kinda) vegan and they were able to change the things we asked for with no problem.
