Can't really "swim", but for a shorter hike to nice falls, I would suggest Minnehaha falls or maybe sea creek falls. Sea creek falls was less crowded and you can fully "dip". The walk is about a mile and a half down a rather step decline, but!! Sport type wheelchair for marathons and things of that nature would work very well if somebody could push you. It is a great place and experience I hope you can make it.
A good shorter hike that you can make as long as you want is Hemlock Falls on Moccasin Creek near Lake Burron. Its 3/4 to 1 mile from the trailhead, has a great swimming hole, and usually isn't too crowded. An easier hike and little more visited swimming hole is at Helton Creek Falls near Blairsville.

If you're able to park near the trail head, the hike is approximately 2 hours round trip. The hike involves narrow passages, rocky terrain as well as a small stream you'll have to walk through.
