Yes they need to see your original document for example citizenship certificate or green card. It depends as on if you are comfortable sending those docs by mail.
As far as sending all your information through the mail,I'm sure you can but you just have to make sure all your documents are there.But i believe they also make you schedule for an interview to come in.
