The JV volunteers will prepare bedding for the cat cages, fold sheets and put them away, clean the kennels when a dog makes a mess, etc. During the orientation they will show you what you can do to help and they encourage you to ask around if you would like to do more.
If I recall they go through an orientation which explains everything that will be expected of them. Good luck and have fun. It's a great experience.
