Can I pay for the room in cash?

You can pay in cash but you have to have a credit card on file

I agree with Joe. They tell you they're putting X amount on hold on your card for any damages & what-not, but you get it back as long as you leave the room as you found it. They may let you pay cash at the desk & also ask for the X amount to hold as well. You're best bet would be to call them.
