You can always ask for fresh baked chicken they should have some in the back that oil accumulates when it's sits in that steam table it's oil from the chicken itself
You can ask them for a fresher one right off the rotisserie in the deli
I would assume it because they cook them early and leave them under a heat lamp the rest of the day.
People work all day, etc.then they shop 4PM or later. That chicken has been sitting for hours. I boil it in a pot with veggies.
