You can not see it all in a day. We were there yesterday and the Flight of Passage had a 4 hour wait alone. It is a fantastic park!
It will take about 2days to see all of animal Kingdom including getting on the rides
We stayed there for 4 days and didn't come close to seeing everything. We lived everything we did see though! Safari, Pandora, tusker house, countries, animals outside our resort room... Fabulous!
Before Avatar/Pandora...it'd be 1 day (a full day with early opening time and late closing time) so long as you have fast passes. I was in AK on Monday and really wanted to do the Flight of Passage ride... that took us 5hrs and 30min. ..so we barely got to do anything since the park closed early that day.

We spent a full day. Tree of Life esp. cool at night. Make sure to do safari in daylight
