I am flying to LGA on a Monday and arrive at 5:42 pm and need to catch an international flight at JFK that departs at 8:16 pm on the same day. Will this give me enough time to take an Uber from LGA to JFK?

If it is a domestic flight we can understand, but as you have to catch an international flight at JFK you will be missing the flight.

Yes. But do web check in if possible. But understand that TSA lines can jam up during evening rush hour.
