Is there something I can do if I want thick dreads but I have thin hair (other than making dreads out of bigger pieces of hair)

I've seen them add extensions on a man's existing locs. Can't even discern it was added. Gave him a whole new look, thicker and longer!

That's probably your best bet. Start putting olive oil growth oil and things like that
