If you like the dog you can go home with it that day. I would say plan on spending 1.5 to 2 hours there to see the dogs and depending on the day u may have to wait for someone. Spend a good half hour outside with at least two of your favorite choices and get a good feeling about the one u want. Read their history. How they came in. Off the street. How long have they been at the shelter health issues they had and treated for and are they up to date on shots. This location has all the info it can have on the animals and ask them how they have reacted to the shelter to the play time the workers and other dogs since they have been at the shelter. Then play with the dog yourself for 30 minutes at least. Get an older dog if it will be in the house alone for extended time while u work. I recommend if it's a pittbull which is all I have ever adopted 2 years to 3 years old and give it freedom and multiple toys to chew on while your gone. Peanut butter frozen inside a Kong works
