Their ambience, food quality and diverse choices are absolutely amazing!!! Yes, they are busy each time we've been there and I agree reservations are neither easy to come by and at those times you cited. We are New Yorkers who have driven straight from Sebastian, Fl to Stella's the past two years in anticipation of a great meal and have never been disappointed. A phone call would be helpful. They have a huge community table and bar for those without reservations. We were seated there. It was wonderful.

Try and just show up when they first open and you can probably sit at the Community table
They tend to be very busy all the time. I have had better luck when the party is small, no more than 3 people.
They might limit reservations to parties of 4 or more.
We made reservations about 6 weeks in advance.
