I know that it is extremely cold out. We have ice on the inside of our windows. Is this due to the negative temperatures or possible poor installation?

Most likely the extreme cold. No window is exempt from cold air conduction. If you have lots of plants - high humidity Inside - you will have more frost then normal. 25% humidity or less is best for your home, although 35%+ is best for yourself (try to keep around 35%)
