Hi Raye. I have celiac and I eat here all the time! Pupusas are made from corn flour, oil, and water to make the dough. Then they are filled with cheese, beans, or whatever veggies or meat you choose, and the fillings are all gluten free. The curtido, a fermented cabbage, goes on top, also gluten free. The establishment does not have a gluten free kitchen, so cross contamination is possible. I have never gotten sick here and in my opinion, these are the best pupusas I've ever had!
