Depending on what specific information you need to change and if it is an account that Apple administers there are going to be different ways you'll want to approach this. I would always recommend starting with a call to Apple Support via phone :: - https://www.apple.com/contact/ If they are unable to resolve the issue via phone, chat, or email they will be able to setup an appointment for you to physically visit an Apple Store and verify your identity. I have never run into a situation where sharing digital copies of identifying information was not enough though so save yourself a trip :D
