If one person fails to show up for their nightshift, the 2 person crew can't keep it going (they are required to have to folks on staff at all times) so they have to close. The biggest expense at these fast food restaurants, and all shops like this, is payroll, and the biggest asset also happens to be their payroll. I agree, they need to incentivize the night shift a bit -- edit-- $15 an hour With nighttime shift differential.
