What they call "Dry" Sea Scallops are used to fry, blacken or breaded and fried and served. "Wet" Scallops are used for ingredients in seafood moist dishes like seafood casseroles and stews. The Scallops from J & J come in both varieties, just let them know which you want. I've bought dry Scallops from J & J and they were great. Another choice of fresh seafood is Shelly's Seafood in Homosassa Springs. Just purchased today some fresh Scallops, Shrimp and Grouper. They come "Flash- Frozen, vacuum sealed as soon as they come in and are still considered fresh and they always taste fantastic and fresh.
We bought some and they were frozen but shrimp was thawed. Everything is on ice.
