Shuttles run 24/7 -- 365 days a year. Past 10:30 PM and before 8:30 AM at a Sky Harbor terminal just call for pickup. Most "Sunday" nights shuttles are running frequently until midnight.
They run 24/7. After 10:00 pm you have to call and let them know what terminal to come pick you up at. Have not had an issue getting them even with a very late flight.
24/7... if after 10 pm, call them to let them know that you need a pickup.

They do not stop! You can book ahead of time, but do not have to! They are very fast!!
I would think they run as long as planes are flying in and out. They have always been running every time I fly.
