There aren't gates that I remember. Anyway it's at the end of the runway so you can watch from the comfort of your car.

They removed the sign that says it closes at 7. But the website still says 7pm... Regardless, Ive been there many many times after 7 and have never been asked to leave. You'll be fine

The DFW Airport Police will generally patrol the area after 7pm. I don't know if they will enforce the posted 7pm closing time or not. Either way, you can just stay in your car and enjoy the planes landing and taking off.

It's a dedicated observation area for arrivals and departures. As and Ds happen well after 7pm. I enjoy night landings and how the planes landing lights stack up stair-step style in the distance on their approach. In the summer it doesn't get dark until after 9pm. I've had no problems. The last departure is probably around 11:pm (TSA closes about 9pm), and the last arrival is probably around midnight. I arrived late from LA one night (midnight) and I could see from my airplane seat cars parked at the Founder's Plaza. I made a point to look if we landed on that runway. The earliest departures are probably 5 am, I'm not sure. You're probably good as long as something is happening in the landing and taking off hours. Some people here suggest you can stay there anytime in a 24 hour period. Maybe. But, between midnight and 5am there is no reason to be there since there is nothing to observe, and security on patrol may ask that you leave. I'm sure you can't "camp" there however.
