They generally do the show unless it is raining or if there is really strong winds. So other than that you should be good. The times I have been there we weren't seated for an hour and a half before the show we sat about 20 minutes before.
Presentations are in doors so they're not weather-dependent and there are many exhibits and other interesting things to do in the center between presentations
The Fall Flights shows start at 3, so you only would be sitting for a max of 30 minutes. I had my husband just save seats for us around 2:30 & walked around with my kids until a few minutes before the show began. It's a pretty relaxed atmosphere since it's outside & there's a wide open area with walking trails around the stone amphitheater.
Check weather well before planned trip. As for bored kids, play "what if" games. As in what if you could fly, be a superhero, etc., what eould you do? Then build on it....kids make pretty good stories, if you help them.
Plan ahead. Check the weather forecast. Bring a coat if it is gping to be cold or sunscreen if it is gping to be sunny.
