Pay attention to the weather. If there's been a storm in the previous 3-4 days, that likely stirred up colder water from deeper in the lake so the cold water will be on the top, where you swim. If it's been calm and the sun's been shining for several days, the water near the beach will be warmer. It's never Caribbean warm.
