I am a vegan. Would this hinder my chances of qualifying for a study?

Yes, it would. You must eat the exact same meals as everyone else. No personal food is allowed, and the meals often contain meat and dairy.

yes but when I was there several times, they always tell me I do not have to eat everything and I was able to eat just half of my meal if I wanted to. Sometimes I would skip breakfast or dinner because it looked weird.

Depending on the study. Some studies require you to eat every thing given. I think they call it high fat diet.

Yes. Some of the studies require a certain diet, which does include meat and eggs, etc. If you get past the initial requirements, then afterwards once you're inside a PPD room reading and signing the contacts, it'll be listed on there what you'll be eating / how frequently and the blood draws after that since food affects results. So yes, you can opt out of the study if the foods listed aren't fit to your needs.
