I have never really had a bad experience in the park or the shops. My children are grown and gone so sometimes, my wife and I go to Hershey Park just to watch the wonder in the children's eyes. Magical place even for teenagers. Hersheypark Place is a good location to spend quiet time and have a desserts. There are shops across from the restaurant that are amazing. You could do brunch at Hotel Hershey and visit their gift shops.
You could try the chocolate tasting at Hersheys Chocolate World, then check the Hotel Hershey. They occasionally have some adult events.

Go at night, there are less kids but never no kids. But regardless, you wont have to deal with them in things like make your own chocolate bar for example. It is one family/person at a time most of the time and it is really cool for who is a chocoholic!
Definitely u can go after 8 pm and u can have all the chocolate u want
Not that i know, you can have a great time, but i believe children are still going to be there
Unfortunately not however, if you hit the shops after 8pm on a weeknight, you pretty much have them to yourself.
