Staying on club level comes with additional perks, included in your stay, such as "free" food certain times of day.
Much like life, more money means more privileges. Food, room, concierge services..etc.
Club room access means more 💰 for the Mouse.
I think it might have to do with different levels of rooms ( the type of room) and you get a little more ( newspaper snacks etc) but not 100 percent positive I would call guest services to find out
