The replies from Zac Woodward and John Wittenberg both hit the nail on the head. A combination of green coffee's long shelf life and proper storage both contribute to our coffee's freshness. We are also lucky to have such temperate weather in the SF Bay area. It's not too dry and not to humid which is perfect for coffee storage.
Green coffee can keep upwards of year if stored properly (some companies would argue much longer, I believe Sweet Maria's would not). Sweet Maria's also buys smaller lots (higher turnover) and uses GrainPro bags whenever possible instead of burlap/jute.
Green beans stay fresh for a long time.
