Julio Nungaray helped us on troubleshooting with the roaster we bought (Aillio Bullet) he also shows us how to operate the machine as a plus. He has been sending phone text to see of everything is ok. Any Company should have a Julio Nungaray with them. Excellent Mechanic and coffee roaster!

Our pricing is set directly with farmers and exporters so it isn’t impacted by the global coffee exchange price when it is down, as it has been for some time. For example our prices in key origins we buy from, like Guatemala, Colombia, Ethiopia, Kenya, Sumatra, Rwanda and Burundi has not dipped lower with the global market. But also we pay a stable price that is considerably higher, in the general range of + 2.00 usd or more over the current 1.00 USD market. So a premium like that for quality isn’t really about the issues that change the global exchange level, like what the Indexed Funds are doing. It’s concerned with longer term supplier / farmer relationships that result in us getting the quality of coffee we can sell! -Tom.

The replies from Zac Woodward and John Wittenberg both hit the nail on the head. A combination of green coffee's long shelf life and proper storage both contribute to our coffee's freshness. We are also lucky to have such temperate weather in the SF Bay area. It's not too dry and not to humid which is perfect for coffee storage.

I love coffee however I have acid reflux. Do you have low acid coffee beans?

Hi Linda. Thanks for asking. We do have coffees with low acidity, I would recommend referencing the spider graphs that accompany each of our offerings. Coffees with a low score in 'Brightness' will be less acidic. Darker roasts tend to have a lower acidity, because many of the acidic compounds in the coffee are broken down in the later stages of the roast process. Freshly roasted coffee may be easier on your stomach too. Sometimes aged oils on the outsides of old coffee beans can become rancid and irritate your stomach.
