Most of the food is non GMO, gluten-free or dairy-free... You might not see a list with the gluten-free options since the food itself is balanced fully veggie or vegan dishes or clean meats such as lamb, beef and fish. Ethiopian restaurant does not use pork or different fat unhealthy meat. Anyway, you may ask the chef.
I dont think they're listed but Injera bread made with only teff flour is gluten free. You'd have to ask them if their Injera is gluten free or not. There's many other items on the menu that dont have gluten though, since gluten isn't normally there in Ethiopian cuisine
