I booked 2 days in advance over christmas with no issues. It sounds like the summer is much busier than fall and winter.
I just booked mine for 3 people in February. all the Airbnb's in area seem booked already so I was afraid the paddleboards may be booked as well. I went ahead and booked just to be safe and I didnt have any issues.
It also depends what dates you are trying to book
