I did a friday and it was relatively calm, I'd say weekday before 5
We went for a honeymoon in summer; hot, but on the artificial beach, with my husband we had a great time
It's hard to say since FL is tourist central and stay warm mostly year round. But with that being said, statistically speaking the least busiest season is any weekdays excluding holidays or near holidays in November through January. Typhoon lagoon did close down for maintenance Jan to Mar in 2017 so I would check their schedule. Hope this helps!
