You can get your plates the same day, but good luck getting an appointment though.
Appointments are booked out about 2 weeks currently, but once you get in and go through the bureaucracy, and as long as you aren't getting vanity plates, they have plates in stock behind the counter.
You can get plates same hour of your appointment the same with titles they will print it for you on the spot for an additional fee.
As soon as you make an appointment for the DMV you could get the plates the same day
