I work in fast food. If I work 16 hours in a 24 hour period with less than 8 hours off in between am I entitled to double time? Or can the company deny that?

Maybe not. Your employer should have an established workday. Say midnight to midnight. if you work from, say, 4pm until 8am, you probably wouldn't earn o/t for that period because you worked 8 hours on one day and 8 hours on the next day. So, you must know when the workday begins and when the workweek begins.
