Don't waste your money spending $310 a person on vegetables with no butter , the chef cant use any french culinary technique making vegan , eat Idian in London for same price it will cost for a four top with wine at the Laundry.
The menu changes daily and is at a fixed price. They will accommodate allergies and food preferences and may substitute as they can. The menu is generally a very rich French cuisine which includes several meat and cheese courses. They do offer vegetarian options but you'll want to call ahout a vegan menu prior to making your pre-paid reservation.
I agree with the guy above, if you are going to spend this kind of money on dinner I would make sure that you are indeed getting your dollars worth sans meat or butter or cheese. In some ways I think the experience is worth the price regardless of menu. Call ahead to see what they will do. Good luck.

They have two options per day - I think that its only vegetarian, not vegan though. You can see samples on the website, and you choose which menu you want at the restaurant
I would call and ask them. I went with someone who is very strict about being vegetarian and needed gluten free options and they were able to accommodate. I would imagine that you would have the "tasting of vegetables" with variations.
