Is self checkout open until the store closes?

Usually. There have been several times though late at night where they close the self checkout early and you gave to go through a normal line.

Yes, as far as I know. Latest I've been in is around midnight, but they're open until 1 a.m.

Sometimes they close it early & make you wait in one checkout line with like 8 ppl in line w/ an ansy Cashier because there's only like a half hour till they close. Lolz. He must be afraid of all the groceries still in that amount of time for closing LOL.
