The Gorge is a three day event so when they say tested 48 hrs before the event, does that include all three days of the event? I know it's kind of in the middle of nowhere so hoping it includes the whole "event" so we're not having to search.

They mean the day of. As you walk in and go to the testing center they'll give you a wristband and that's it for the whole event. You just need proof of vaccine or proof of test. At home tests do not count as there's no proof you took it. Need a test with your name on it.
