My wife and I took their sausage making class and had a great time. We have made our own sausage with venison many times - but we still learned some cool things. We would recommend this class to anyone interested in making their own sausage or those that are only interested in learning how sausage is made.

Stopped by a couple of weeks ago while visiting the city market on a Saturday. Wanted to grab a quick breakfast on the way out. I tried your breakfast burrito and holy cow Batman, definitely the best breakfast burrito I've ever eaten. It was fresh, flavorful, just the right mix of egg sausage cheese and a hint of salsa. Just a tad crispy but the ingredients inside remained moist and delicious. Seriously I didn't know a breakfast burrito could be that good. Going to have to come back and try the rest of the menu!

It's ever so Satisfying when I make it in here to spend some of my hard earned money on sum really really Good Food. Brats, scrapple, cheeses, hot sauces, smoked honey, breads, burritos, steaks... They have it all and it's all so Good !! Definitely worth stopping in and picking up some of their Fine cuts of meats and all the other fixings they have for you to Enjoy ! Bring back the Bacon wrapped dates !!

Visited for both lunch in the restaurant and a sausage-making class in the back room of the butcher shop. Eating at the restaurant, the “Pigwich” sandwich was delicious, and excellent fries with a quality beer selection. The sausage class was interesting, as much as a sneak peek into the inner-workings of a butcher shop operation as much as a class for personal future cooking. The instructor was knowledgeable and friendly, and sounds like has dealt with a diverse array of groups from lit bachelor parties (sir please don’t touch the knife) to our group which was a split of a corporate group and some individuals. Information about the sausage recipes itself was decent, though there were a lot of barriers presented tough to surpass at home like the quality ingredients like fresh spices that were ground and smoked vs. dry goods you get at the supermarket. More interesting than anything was the culinary knowledge shared by the professor that is transferable to almost any type of grilling, prep and shopping for meat-based food. Left with a heavy bag of handmade sausage, ready for the grill. After the class and lunch, it was a busy Sunday at the River Market, vibrant and alive with patrons which was a nice change of pace coming out of the Covid pandemic. So many colors, smells, farmer’s market goods, and antiques and miscellaneous products to take in.

There is a butcher box program. I opt to pick it up bi weekly, but weekly is an option. There are three (I believe) poundage options -5, 7, 10. There's usually a couple of cuts of chicken, pork, a premade meal option (tamales, breakfast pot pies, stuffed peppers, etc) and a charcuterie inclusion. There's also usually a small container of a housemade garnish, like a dressing or hot sauce, or pickled something.
You can't just walk in and get a whole pig but you can call ahead and have them order you one the next time they're picking up pigs.
Absolutely Debra. Will pry be best to bake from frozen state so don't need to thaw!
Unfortunately we can't ship the green chorizo at this time. We do have a couple shelf-stable products that we can ship, but the majority of our products are not permitted by USDA to be shipped

I can't say that I know what knockwurst is, but I'd give them a call or stop by if you are close. I'm sure if they do have it, it'll taste great!

The box generally includes 1 cut each of beef, pork & chicken + charcuterie. Last week was chuck roast, pork steaks, chicken thighs & herbed bacon; 12-16 oz ea. $25
Yes localpig does carry beef cheeks but you'll want to call ahead to make sure they have them on the day you are coming in. You can also call a week ahead and have them set you some aside when they're breaking down the beef.
You can get pretty much any part of the animal you want the best bet would be to call for specifics and pricing.
Typically no fresh pigs feet in a butcher shop, you might be able to get them directly from a slaughterhouse though.
