There is a butcher box program. I opt to pick it up bi weekly, but weekly is an option. There are three (I believe) poundage options -5, 7, 10. There's usually a couple of cuts of chicken, pork, a premade meal option (tamales, breakfast pot pies, stuffed peppers, etc) and a charcuterie inclusion. There's also usually a small container of a housemade garnish, like a dressing or hot sauce, or pickled something.
They have a weekly subscription wherein you get a variety of meats but the cuts are somewhat random.
Yes. You can get whatever you want at the meat counter.
