You can hook up to amps at the store, but mostly it's people trying out guitars they want to purchase.

I don't know. You'd have to ask a salesperson. I have seen people testing out amps, and playing on guitars they're interested in purchasing. There's a bass room with amps, amps on the common space of the floor--people test these out frequently. In addition to this, there's an acoustic guitar room I've seen guitarists playing in. There's another room that houses the expensive or higher grade guitars, but I haven't seen anyone playing guitars inside. Ask them, but I don't think they'd allow outside instruments unless you're bringing it in for repair, exchange, to test out an amp, or a class.
