To answer your question, because the three previous answers forgot to read the part in your question where it says "new"; The owners want to settle down because running such a large restaurant as a mom and pop couple can be draining. They would be making a significant amount of money based on how much money they put in to the restaurant and making it arguably Saint George's number one restaurant. They are looking to retire.
