I have been buying whole briskets from Carl's for nearly two decades. They do vary in fat content, but most of the fat is on top with some marbling inside which is necessary for cooking a juicy and flavorful brisket. I estimate the fat content to average around 20%, and the total weight averages around 11 pounds. It is always cooked/smoked to perfection! You can order either a hot or cold brisket, and I suggest you call ahead to order. There are 3 adults in our family. Each time I purchase a brisket from Carl's, I divide it into 4 sections, storing 3 of them it in the freezer for later use. One section a big enough to feed 3 BBQ loving adults a meal with enough usually left over for a fourth person. That makes 16 meals out of 1 brisket and comes to $4.68 per person, which is a great price, especially for BBQ of this quality. If you decide to eat at Carl's, and you are really hungry, I challenge you to order one of their loaded potatoes. It is massive and delicious!
